Hi chefs! Today we will make homemade caramel pop corn!!! It takes probably about 1 hour 30 minutes( Except I don't bake my caramel pop corn in the oven , so if you don't bake it, it takes about 20 minutes.) This recipe makes about 20 servings! Lets grab our aprons and start!
INGREDIENTS:
1 cup of butter
2 cups of brown sugar
1/2 cup of corn syrup
1 Tsp. Salt
1/2 Tsp. baking soda
1 Tsp. vanilla extract
5 quarts of popped pop corn (I use 1 cup of pop corn for my family of 4, and there is always left overs in a good way!)
DIRECTIONS:
1. Preheat oven to 250 degrees F. Place pop corn in a very large bowl. (If you don't want to bake the pop corn you don't have to turn on the oven)
2. In a medium sauce pan over medium heat, melt butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 4 minutes. Remove from heat and stir in the baking soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
(step 3 is only necessary if you are baking the pop corn. if you aren't baking the pop corn, stop at step 2.)
3. Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let it cool completely before breaking into pieces.
